Back again on this blog. For those of you who are reading this blog for the first time, I will first explain what they will receive.
So, this is a blog of daily activities in the kitchen, friends can get good education about managing time, structured work, knowledge about gastronomes and also what things should not be done or must be anticipated so that human error does not occur.
On thursday 13 feb 20, I came to campus at 7:30, then set up grooming.
At 08.00 we conducted an oneline breafing commanded by 6th semester seniors.
After that we were directed to enter the cold kitchen after mice en place in the locker room.
We are back on line and re-discussing the menu that will be done after preparing the ingredients from yesterday.
Our group makes the main course, namely:
Duck menyatnyat, white rice, chili sauce, plecing vegetables.
I was tasked to cut the duck into 12 parts per animal.

After that, the duck was marinated and then cooked in wok, with saute first the fine spices and put the duck in wok and add water.
duck is waited for about 1 hour on high heat so that the texture is soft.
After that we serve the service of the restaurant to prepare food according to the order. During service, there is no bickering between the server and the kitchen, everything works smoothly. But according to the provisions, food will be issued which is important to have a captain order.
We do plating according to the number ordered, not directly according to the plate, because we don't use warmers.
After all is done, we do general cleaning and clean the cold kitchen and wok that was used in the main kitchen to cook duck bra noise earlier.
After cleaning, we were allowed to break. We returned at 1:30 to receive direction from Chef Dino. After that, we boys waited for the study time.
Female friends stay in the kitchen while checking and reviewing items that have been used.
